New Edition of Educational Institute’s HACCP Textbook Offers Latest Information on Critical Food Safety Issues

Lansing, Michigan, September 2008 - The American Hotel & Lodging Educational Institute (EI) has published a new edition of "Food Safety: Managing with the HACCP System," an easy-to-understand textbook that provides hotel and restaurant food service managers, staff members, and students with the essential information they need to implement a comprehensive food safety system that targets every phase of food production and service.

The book was written by Dr. Ronald F. Cichy, CHA, CFBE, CHE, professor and director of The School of Hospitality Business at Michigan State University, who has 24 years of experience as an author of food safety books. This eight-chapter text presents the Hazard Analysis Critical Control Point (HACCP) method in a systematic, understandable format. Clearly defined terms; detailed lists of food safety responsibilities for top managers, mid-level managers, and staff members; and checklists for all of the control points make this a resource that can be readily put into practice in any food and beverage operation. In addition, because it refrains from direct reference to U.S. government regulations, this textbook is highly applicable to international readers.

New information in the second edition includes:
Updated statistics from the Centers for Disease Control and Prevention (CDC)
      Discussion of major food allergens
New time-temperature control for safety of potentially hazardous foods
Updated sequence for hand washing and avoiding recontamination of hands
New information on risk-based inspections, addressing risk categories, methodologies, and the food establishment inspection report

"Food Safety: Managing with the HACCP System" is available from the Educational Institute for $57.95 for AH&LA members and $89.95 for nonmembers. To order, visit www.ahlei.org, or call 800-752-4567 or 517-372-8800. Outside the U.S. and Canada, call 407-999-8100.
